Pan(egg)cakes

Recipe #3: Blueberry Pancakes

I found this recipe on a nutrition message board that M. and I used to read. They are supposed to be pancakes - but they don't REALLY taste like a normal pancake since there's so much egg in them. They are still pretty tasty though, just a different texture than you're used to in a pancake.

Ingredients:
-1 cup egg whites
-1 cup oatmeal
-1 cup cottage cheese
-a dash of vanilla and cinnamon
-100 g blueberries
-1/4 tsp baking powder

Directions:
1) In blender, mix egg whites, oatmeal, and cottage cheese until smooth.
2) Add in baking powder and mix for a few seconds.
3) Add in blueberries.
4) Cook them like a normal pancake!

Nutritional Information:
This recipe made 16 flat (but still yummy) pancakes! I will eat 2 per serving, which adds up to about 95 calories in total (12g carbs, 9g protein, 1.3g fat). Add some fruit, a dab of yogurt, or even applesauce - syrup could work too - and you've got yourself a nice little breakfast!
